Chocolate Candy Box for Dad


With Father’s Day only a couple of weeks away you still have enough time to order the mold for the candy box.  I purchased the mold at KitchenKraft.com.  These are fast and easy to make using candy melt wafers you can get at your local craft stores.  Melt the candy wafers in microwave or chocolate melting pot.  Spoon the chocolate into the mold and tap the mold until you get all the bubbles out.  Smooth out the back and place in the freezer to firm up.  Once it has been frozen the box will  pop out, clean up the edges and fill with dad’s favorite candy.

On Valentine’s Day I had an order for 24 of the heart shaped boxes.  Doing one at a time was too time consuming so I order an additional two molds and went into production.  I had looked at a vibrating table for the candy molds but it wasn’t in my budget.  While I was at work the next day my husband disassembled an old paint shaker he had in the garage, bolted a wooden tray on top and covered it with wax paper.  When I returned home I was so surprised to find 5 heart boxes made and perfectly smooth on the back.  I asked him how he did it?  He showed me this hugh machine, spooned the chocolate in the mold and placed the mold on the tray and turned it on.  To my surprise it worked.  The bubbles all popped up and the back of the mold was perfectly smooth.  The only draw back was this thing was so loud the cats took off and hid under our bed and the dog was running around barking like crazy.  By the time we were finished with the order of 24 boxes the animals had calmed down and stay away from the kitchen when I’m working with chocolate.

Football Cake for Father’s Day


This is fast and easy cake to make for your dad.  The pan I purchased at JoAnn’s Craft store and only used a star tip to make the entire cake except for the writing.  To make this extra special I put in one tablespoon of Caramel Extract in a yellow cake mix.  At the office we did a taste test for all my friends, Caramel came in 1st and Rum was tied with Chocolate.  I purchase my extracts from Wakinsonline.com.  If you use 1/4 cup of Hershey’s Cocoa Powder in with your buttercream icing then add a tablespoon of Chocolate extract (or maybe 2 tbsps) Dad might just forget that your boy friend put twenty for sale signs in the front lawn.

Here Dad is the $20 I borrowed from you


This was a tough one.  It took two hours hand painting on fondant with gel food color and clear vanilla extract.  I’m not the best at painting faces but my friend was pleased with the results which is all that mattered.

Basketball Cake for Father’s Day


This half dome basketball cake might just be the ticket to get you out of the dog house from when Dad had to come and get you because you wrapped your truck around a telephone pole trying to see if you could get a peak of who was at the celebrity tennis tournament.  Of course a couple of Laker tickets wouldn’t hurt!

My brother and I were always in the dog house and had to come up with something special for Father’s Day.  Most of our crazy stunts and unique ideas for Father’s Day are in my new book “How to get out of the Dog House for Father’s Day.”

Flag Cake


For your Memorial day this flag cake is all made using just one tip, the star tip.  You can also use this same cake pan but us strawberry for the strips and blue berries in the star section with little white buttercream icing stars in between each star.

Princess Tiana Cake


Princess Tiana is hand painted on Fondant using clear vanilla extract and food coloring gel.  Since I didn’t have a character pan of Tiana I used the Cinderella pan.  Add some fondant flowers and flower confetti and this princess is ready for the party.

Along with this order there were 100 Princess cupcakes.  Needless to day that is all I did yesterday.  The faces of the cupcakes are mini Nilla wafers.  I used a small hand drill to make a hole through the Nilla wafer to insert the crown toothpick.  The cupcake liners and toothpick crowns I purchased at Michaels craft store.  JoAnn’s craft store also carries these as well.  These take some time but when you see the faces of the children when I arrive with the cake and cupcakes it is worth it.

Book Cakes & Matching Cupcakes


For my daughter’s birthday we surprised her with a book party.  Everyone came as a character for a book.   I went as Julia Child and made a book cake of two of her favorite authors.  The cakes iced with buttercream and covered with sugar sheets.  The cupcakes were matching sugar sheet flowers.  The sugar sheets are available in quite a few different patterns.  The local craft stores have punches as well as Cricut Cake machines that will cut the sugar sheets into many different designs.  The Cricut Cake machine has different cartridges with all types of designs for all different cake designs.

The cakes were her two favorite flavors Caramel and Rum.  I use both of these extracts quite a bit.  Each year at the Orange County Fair Watkins would have a book at the fair that show cased all of their products.  I would go there just for the extracts and to see what new flavors they had.  After buying out all the favor the lady that was working the booth spoke with me for a while telling me that I should sign up to become an independent agent so that I could get a discount.  She gave me all the information and I checked it out and had a lot of questions for her so I went back the next week to see her.  I’m not a sales person and I would only want this for my cakes.  Anyway I ended up signing up for one year.  Naturally I had to try everything they had and told my family and friends about their products.  This is a great opportunity for someone who wants to start something at home.  For me I’m happy with their extracts and I must admit I like their bath oils and lotions. For Christmas I put together gift trays and baskets with bottles of extracts, measuring cups and cupcakes or cookies.  For my friends that were not bakers I put together baskets with their lotions, oils and lip balms.   Watkins.com also has recipes online and a newsletter on all of their special for the month.  If you are looking for baking or extract supplies you must check them out.  Their pricing on the extracts is half of what the local grocery stores charge.  Check them out at www.watkinsonline.com.

Angel Cakes


Both of these angels were hand painted on fondant.  You can paint on fondant using clear vanilla extract and gel food coloring.  The second angel was from a stain glass pattern I had made years ago.  I made the little stain glass angels as gifts for family and friends a couple of years ago for Christmas.

Sand Castle Cake


This is a 9″ round cake with a cupcake on top.  Make your chocolate sea shells out of candy molds ahead of time.  Also I used Hershey’s chocolate squares around the outside.  Ice the cake first with buttercream.  While the icing is still moist attach the chocolate shells and Hershey’s squares.  Make the sand out of crushed Nilla wafers.  Attach these while the icing is moist so that they will stick.  When crushing the wafers you can put them in a baggie then crush them or use a coffee grinder.  Attach a little sea shell flag on a stick and your cake is ready.

XBox & Controller Cake


When I was first learnng how to do cakes one of my co-workers came into my office one day and asked if I could do an Xbox for her son’s birthday.  My first response was what is an Xbox?  This was met with laughter.  She left and came back a short time later with a picture of the Xbox and controller.  It didn’t look that hard so I said I would try and do the controller first and bring it in the next day to see if she said liked it.

Fondant is a sugary dough that is used to cover cakes.  You will mainly see this on wedding cakes.  I had used fondant in my classes to make animals that we put on cupcakes but I had no experience in actually covering a cake.  How hard could that be??  I baked a small cake and cut it to the general shape of the controller and covered it with buttercream icing.  Next step was to color the fondant black.  I must have used ½ a jar of black gel food coloring and I could make was a medium gray and turned my hands purple.  On the cake shows they show how you can airbrush fondant.  My husband had tried to teach me this but all I achieved was painting the cabinets and counter tops.  The only thing left was to paint the fondant.  Using some clear vanilla extract and the black gel food coloring the controller was painted in now time flat!  The rest was just piping and I used mini M&M candy for the buttons.  I rolled out a long black rope for the cord and I was finished.  I was very proud to my creation so when the next morning I had one of my friend walk into my office and asked me why I had made a dead rat, my heart sank.  The next two who came into my office also agreed it did look like a dead rat.  The lady I was doing this for came in and did let everyone know that is what a controller looks like.  She was being very nice but I could tell she wasn’t very happy about it.  So that afternoon after work I started over and this time when I walked in with the completed cake and controller she loved it.

Construction Cake


There is nothing better for boys of all ages then a construction site cake.  This is without a doubt the easiest cake to make.  When you level your cake put the pieces you had left over and build up one side and frost with tan icing.  To make dirt take some Nilla Wafers put them in a ziploc baggie and pound them into nothing.  Sprinkle the dirt over the icing while it is still moist.  The rock I made out of little pieces of Tootsie Rolls.  Add some little construction vehicles and you are finished.

Race Car Brownies


These little race cars are perfect for birthday parties or Father’s Day.  I used mints and life savers as wheels.  You need to make the actual cars out of brownie or pound cake.  Use mini MM’s for headlights and you are ready to roll.

Superman Cake


For that superman or super father who always bails you out this cake is easy to do.  This is a 1/2 sheet cake that I made as a grooms cake for my daughters best friend’s wedding.  The suit and tie are fondant and the shirt is buttercream.  To jazz it up I painted Wilton’s black sparkle gel on the suit jacket.  The flowers on the jacket are also out of fondant to match the bride bouquet.
